Pineapple Casserole

Ingredients:

1 c sugar
6 tblsp  all purpose flour
2 c grated sharp cheddar
1 c Ritz crumbs (1 sleeve)
2 20 oz cans crushed pineapple
well-drained and reserve 6 tblsp of the juice
1 stick butter
plus extra for greasing pan

Preheat oven 350 degrees

Grease a medium-size casserole with butter

In a large bowl, stir together the sugar and flour

Gradually, stir in the cheese

Add the well drained pineapple and stir until all ingredients are well mixed

Pour the mixture into the prepared casserole dish

In another medium bowl, combine cracker crumbs, melted butter and reserved pineapple juice
until evenly blended.

Spread crumb mixture on top of pineapple mixture

Bake 40 minutes or until golden brown.

Great when serving Ham!


Betty, one of the nurses I work with brought this dish to a carry in we had for Easter.
Last night I took it to a friend's who invited the gang over for a belated Easter dinner.
